Instructions

  1. Prepare for Roasting: Preheat the oven to 400℉ (200℃). Using a sharp knife, slice about ½ inch off the top of each garlic head to expose the individual cloves. This helps the olive oil penetrate and allows the garlic to roast evenly without drying out.
  2. Season the Garlic: Place each garlic head on a piece of aluminum foil. Drizzle about half a tablespoon of olive oil over the exposed garlic cloves on each head, then sprinkle a pinch of salt evenly on top. Wrap the foil securely around each garlic head to trap steam during cooking.
  3. Roast to Perfection: Arrange the foil-wrapped garlic heads on a baking sheet or sheet pan. Roast them in the preheated oven for 35 to 40 minutes, or until the cloves are soft, caramelized, golden brown, and can easily be squeezed from their skins. Remove from oven and allow to cool before handling and serving.
  4. Serve and Store: Once cooled, squeeze out the roasted garlic cloves from their skins. Use immediately as a spread on bread or incorporate into recipes, or store in an airtight container in the refrigerator for up to a week.
