Description

Creamy and flavorful roasted garlic mashed potatoes made with tender Yukon Gold or Russet potatoes, roasted garlic, butter, and heavy cream. Perfectly seasoned with salt, pepper, and optional fresh herbs for a comforting side dish.

Ingredients

Scale

Potatoes

  • 2 pounds Potatoes (Yukon Gold or Russet)

Roasted Garlic

  • 1 bulb Garlic
  • Olive oil for drizzling

Mashed Potato Mix-ins

  • 4 tbsp Butter (unsalted)
  • 1/2 Cup Heavy Cream (or milk for a lighter version)
  • 1 teaspoon Salt (to taste)
  • 1/2 teaspoon Black Pepper (to taste)

Optional

  • 1 tbsp Fresh Herbs (chopped chives, parsley, or thyme)

Instructions

  1. Prepare the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the bulb of garlic to expose the cloves. Drizzle the exposed cloves with olive oil, then wrap the bulb in aluminum foil and roast in the oven for 30-35 minutes until the garlic is soft and caramelized.
  2. Prepare the Potatoes: While the garlic is roasting, peel and cut the potatoes into even 1-2 inch chunks to ensure they cook evenly.
  3. Boil the Potatoes: Place the cut potatoes in a large pot and cover with cold, salted water. Bring the pot to a boil over medium-high heat and cook the potatoes until they are fork-tender, about 15-20 minutes.
  4. Drain the Potatoes: Once cooked, drain the potatoes thoroughly in a colander to remove all water.
  5. Mash the Potatoes: Return the drained potatoes to the pot and use a potato masher or ricer to mash them until smooth and creamy.
  6. Add the Ingredients: Squeeze the softened, roasted garlic cloves out of their skins directly into the mashed potatoes. Add the butter and heavy cream to the mixture.
  7. Combine and Season: Stir all ingredients together until well combined. Season with salt and black pepper to your taste preference.
  8. Adjust Consistency: If you prefer creamier mashed potatoes, slowly add more cream or milk little by little until you reach your desired texture and consistency.
  9. Finish and Serve: Fold in any fresh herbs you choose to use, such as chopped chives, parsley, or thyme. Transfer the mashed potatoes to a serving dish and enjoy warm.

Notes

  • Roasting the garlic enhances its natural sweetness and adds depth of flavor to the mashed potatoes.
  • For a lighter version, substitute heavy cream with milk.
  • Ensure potatoes are cut evenly to cook uniformly.
  • Use unsalted butter to control the saltiness of the dish.
  • Fresh herbs are optional but add a bright and fresh note to the final dish.
