For the whipped feta dip:

  • 6 ounces feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Black pepper to taste


Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for roasting.
  2. Toss the carrots: In a large bowl, combine the halved carrots with olive oil, salt, black pepper, and ground cumin if using. Ensure the carrots are evenly coated.
  3. Roast the carrots: Spread the carrots in a single layer on the prepared baking sheet. Roast in the oven for 20 to 25 minutes, flipping them halfway through, until they are tender and caramelized at the edges.
  4. Prepare the whipped feta dip: While the carrots roast, add feta cheese, Greek yogurt, olive oil, lemon juice, and minced garlic into a food processor. Blend until the mixture is smooth and creamy. Add black pepper to taste and blend again briefly.
  5. Serve: Transfer the whipped feta dip to a serving bowl. Arrange the roasted carrots around or on a platter beside the dip. Garnish with chopped fresh parsley if desired and serve warm or at room temperature.
