Razzleberry Dressing Ingredients

  • 1 cup mixed berries (raspberries, blackberries, and blueberries—fresh or thawed frozen)
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons apple cider vinegar or red wine vinegar
  • ¼ cup olive oil
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Freshly ground black pepper to taste


Instructions

  1. Combine base ingredients: In a blender or food processor, add the mixed berries, honey, and vinegar. Blend the ingredients on high speed until the mixture is smooth and well combined.
  2. Add emulsifiers: Add the olive oil, Dijon mustard, salt, and freshly ground black pepper to the blender. Blend again until the dressing is fully emulsified and creamy in texture.
  3. Adjust flavors: Taste the dressing and adjust the sweetness or acidity by adding more honey or vinegar as desired for a balanced flavor.
  4. Strain for smoothness (optional): For a smoother texture, pour the dressing through a fine mesh sieve to remove seeds and pulp before serving or storing.
  5. Store properly: Transfer the dressing to a sealed jar and refrigerate. It will keep fresh for up to 5 days. Shake well before each use to re-emulsify.
