Description

Rasta Pasta is a flavorful Caribbean-inspired dish that combines pasta with a creamy sauce made from jerk seasoning, peppers, and a variety of spices. It’s a delightful blend of spicy and creamy flavors, often served with chicken or shrimp.


Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 1 lb chicken breast, diced (optional, can use shrimp)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp jerk seasoning
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup coconut milk
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro, for garnish


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken (or shrimp) and cook until browned and cooked through.
  3. Add the onions, garlic, and bell peppers to the skillet and sauté until the vegetables are tender.
  4. Stir in the jerk seasoning, and cook for 1-2 minutes until fragrant.
  5. Add the heavy cream, Parmesan cheese, and coconut milk to the skillet, stirring to combine. Bring to a simmer and cook for 3-5 minutes until the sauce thickens slightly.
  6. Season the sauce with lime juice, salt, and pepper to taste.
  7. Mix the cooked pasta into the skillet and toss until well coated with the sauce.
  8. Garnish with fresh cilantro and serve hot.

Notes

  • For a spicier kick, add extra jerk seasoning or chopped scotch bonnet pepper.
  • If you prefer a vegetarian version, substitute the chicken with tofu or extra vegetables.
  • Pair with a side of steamed vegetables or a light salad for a complete meal.
