Rasta Pasta is a flavorful Caribbean-inspired dish that combines pasta with a creamy sauce made from jerk seasoning, peppers, and a variety of spices. It’s a delightful blend of spicy and creamy flavors, often served with chicken or shrimp.
Ingredients
- 12 oz penne pasta
- 2 tbsp olive oil
- 1 lb chicken breast, diced (optional, can use shrimp)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 2 tbsp jerk seasoning
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/2 cup coconut milk
- 1 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chicken (or shrimp) and cook until browned and cooked through.
- Add the onions, garlic, and bell peppers to the skillet and sauté until the vegetables are tender.
- Stir in the jerk seasoning, and cook for 1-2 minutes until fragrant.
- Add the heavy cream, Parmesan cheese, and coconut milk to the skillet, stirring to combine. Bring to a simmer and cook for 3-5 minutes until the sauce thickens slightly.
- Season the sauce with lime juice, salt, and pepper to taste.
- Mix the cooked pasta into the skillet and toss until well coated with the sauce.
- Garnish with fresh cilantro and serve hot.
Notes
- For a spicier kick, add extra jerk seasoning or chopped scotch bonnet pepper.
- If you prefer a vegetarian version, substitute the chicken with tofu or extra vegetables.
- Pair with a side of steamed vegetables or a light salad for a complete meal.
