Description

A quick and flavorful Thai-inspired dish featuring tender rotisserie chicken and noodles tossed in a creamy peanut sauce. Perfect for busy weeknights.


Ingredients

  • 8 oz rice noodles
  • 2 cups shredded rotisserie chicken
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 1 tbsp sriracha (optional)
  • 2 cloves garlic, minced
  • 1/2 cup warm water
  • 1/4 cup chopped peanuts (for garnish)
  • 2 green onions, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp lime juice

Instructions

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha, garlic, and warm water until smooth.
  3. Toss cooked noodles with the sauce until evenly coated.
  4. Add shredded rotisserie chicken and mix well.
  5. Garnish with chopped peanuts, green onions, cilantro, and a squeeze of lime juice.
  6. Serve immediately warm or cold.

Notes

  • Adjust spice level by increasing or decreasing the sriracha.
  • Use almond or sunflower butter for a peanut-free option.
