A quick and flavorful Thai-inspired dish featuring tender rotisserie chicken and noodles tossed in a creamy peanut sauce. Perfect for busy weeknights.
Ingredients
- 8 oz rice noodles
- 2 cups shredded rotisserie chicken
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey or maple syrup
- 1 tbsp sesame oil
- 1 tbsp sriracha (optional)
- 2 cloves garlic, minced
- 1/2 cup warm water
- 1/4 cup chopped peanuts (for garnish)
- 2 green onions, sliced
- 1/4 cup chopped fresh cilantro
- 1 tbsp lime juice
Instructions
- Cook rice noodles according to package instructions. Drain and set aside.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha, garlic, and warm water until smooth.
- Toss cooked noodles with the sauce until evenly coated.
- Add shredded rotisserie chicken and mix well.
- Garnish with chopped peanuts, green onions, cilantro, and a squeeze of lime juice.
- Serve immediately warm or cold.
Notes
- Adjust spice level by increasing or decreasing the sriracha.
- Use almond or sunflower butter for a peanut-free option.
