Description

Pumpkin Pie Overnight Oats are a healthy and delicious make-ahead breakfast option that combines the cozy flavors of pumpkin pie with the convenience of oats.


Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup pumpkin puree
  • 1 tbsp chia seeds
  • 1-2 tsp maple syrup (optional)
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • Pinch of salt
  • Toppings: chopped nuts, yogurt, or extra maple syrup (optional)


Instructions

  1. In a jar or container, combine the oats, milk, pumpkin puree, chia seeds, maple syrup, pumpkin pie spice, vanilla extract, and salt.
  2. Stir well to combine all ingredients thoroughly.
  3. Cover the container with a lid and refrigerate overnight or for at least 4 hours.
  4. In the morning, stir the oats again. Add a splash of milk if the mixture is too thick.
  5. Top with chopped nuts, yogurt, or extra maple syrup if desired before serving.
