Make the crust:
In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9×13-inch pan. Chill in the fridge while you prepare the layers. -
Cream cheese layer:
In a bowl, beat the cream cheese and powdered sugar until smooth. Fold in the whipped topping. Spread evenly over the chilled crust. -
Pumpkin pudding layer:
In a large bowl, whisk together the pumpkin puree, pudding mixes, cold milk, and pumpkin pie spice until smooth and thick. Spread this layer over the cream cheese layer. -
Top it off:
Spread the remaining whipped topping over the pumpkin layer. Garnish with crushed graham crackers or chopped pecans, if desired. -
Chill:
Cover and refrigerate for at least 4 hours or overnight to let it set.

If you can’t find pumpkin spice pudding, just use another box of vanilla pudding and add an extra teaspoon of pumpkin pie spice.
