Instructions

  1. Make the crust:
    In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9×13-inch pan. Chill in the fridge while you prepare the layers.

  2. Cream cheese layer:
    In a bowl, beat the cream cheese and powdered sugar until smooth. Fold in the whipped topping. Spread evenly over the chilled crust.

  3. Pumpkin pudding layer:
    In a large bowl, whisk together the pumpkin puree, pudding mixes, cold milk, and pumpkin pie spice until smooth and thick. Spread this layer over the cream cheese layer.

  4. Top it off:
    Spread the remaining whipped topping over the pumpkin layer. Garnish with crushed graham crackers or chopped pecans, if desired.

  5. Chill:
    Cover and refrigerate for at least 4 hours or overnight to let it set.


Notes

  • If you can’t find pumpkin spice pudding, just use another box of vanilla pudding and add an extra teaspoon of pumpkin pie spice.

 

  • This dessert holds up great in the fridge for 2–3 days, making it a perfect make-ahead option.
