Instructions
- Boil Potatoes: Slice the baby potatoes in half and place them in a large pot. Cover with water and add 1 teaspoon of salt. Bring to a boil over high heat, then reduce heat to medium-high and boil until the potatoes are fork-tender, about 7-8 minutes. Drain well in a colander.
- Cook Bacon: While the potatoes boil, heat a large skillet over medium heat. Add chopped bacon and cook until it turns brown and crispy. Remove bacon pieces and set aside, leaving at least 2 tablespoons of bacon fat in the skillet for flavor.
- Sauté Onions: Add the diced onion to the skillet with the reserved bacon fat. Cook over medium heat until the onion softens and becomes slightly browned and caramelized, about 5-7 minutes.
- Cook Potatoes in Skillet: Add the drained potatoes to the skillet with the onions. Stir briefly to coat them with the fat, then allow them to cook undisturbed for a few minutes to brown on the bottom. Stir occasionally to evenly brown all sides, about 8-10 minutes total.
- Add Green Beans: Incorporate the frozen green beans directly into the skillet (no need to thaw). Stir to combine and continue cooking until the green beans are heated through and tender, about 5 minutes.
- Finish with Bacon and Seasoning: Chop the cooked bacon and return it to the skillet. Sprinkle everything bagel seasoning over the skillet contents, stirring to combine. Taste and adjust seasoning with salt, pepper, or additional bagel seasoning as desired. Serve hot.
