Description

Poppy Seed Chicken Roll Ups are a comforting, cheesy baked dish featuring tender cooked chicken, creamy cheeses, and savory poppy seed sauce wrapped in flaky crescent roll dough. This easy-to-make casserole combines creamy, cheesy goodness with a delicate poppy seed flavor, making it perfect for a quick dinner or potluck.

Ingredients

Scale

Chicken Mixture

  • 2 cups chopped cooked chicken
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese

Crescent Rolls

  • 1 (8-oz) can refrigerated crescent rolls (8 triangles)

Sauce & Topping

  • 1 (10.5-oz) can unsalted cream of chicken soup
  • ½ cup milk
  • 2 tsp poppy seeds
  • ½ cup shredded cheddar cheese
  • Cooking spray, for greasing the pan

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Mix Chicken Filling: In a bowl, combine the chopped cooked chicken, softened cream cheese, and 1 cup of shredded cheddar cheese. Stir until well mixed and creamy.
  3. Assemble Rolls: Separate the crescent roll dough into 8 triangles. Spoon the chicken mixture onto the wider end of each crescent triangle, then roll them up towards the point. Arrange the rolled crescents seam side down in the prepared baking pan.
  4. Prepare Sauce: In a separate bowl, whisk together the cream of chicken soup, milk, poppy seeds, and the remaining ½ cup of shredded cheddar cheese until well combined.
  5. Pour Sauce Over Rolls: Carefully pour the poppy seed sauce evenly over the crescent rolls in the baking pan, covering them thoroughly.
  6. Bake: Place the pan in the preheated oven and bake uncovered for about 30 minutes or until the sauce is bubbly and the crescent rolls are golden brown.

Notes

  • Use fully cooked chicken, such as rotisserie or leftover roasted chicken, for convenience.
  • The dish can be customized with other cheeses like Monterey Jack or mozzarella if preferred.
  • If you want a crispier top, you can broil for 1-2 minutes at the end of baking, watching carefully to avoid burning.
  • This recipe serves 3 but can be doubled for larger gatherings using a bigger pan.
  • For a slightly healthier version, use reduced-fat cream cheese and cheddar cheese.
