Description

A hearty and flavorful burrito bowl inspired by the Pioneer Woman, featuring seasoned beef, rice, beans, and fresh toppings for a satisfying meal.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/4 cup water
  • 2 cups cooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup pico de gallo or diced tomatoes
  • 1 avocado, diced
  • 1/4 cup sour cream
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges


Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until soft.
  2. Add garlic and ground beef. Cook until the beef is browned, breaking it up as it cooks.
  3. Stir in taco seasoning and water. Simmer for 5 minutes until the mixture thickens. Remove from heat.
  4. Warm the black beans and corn in a saucepan or microwave.
  5. To assemble the bowl, start with a base of cooked rice.
  6. Top with the seasoned beef, black beans, corn, shredded cheese, pico de gallo, avocado, and sour cream.
  7. Garnish with fresh cilantro and a squeeze of lime juice.
  8. Serve immediately and enjoy!
