Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/4 cup water
- 2 cups cooked white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded cheddar cheese
- 1 cup pico de gallo or diced tomatoes
- 1 avocado, diced
- 1/4 cup sour cream
- Fresh cilantro, chopped (for garnish)
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a skillet over medium heat. Add chopped onion and cook until soft.
- Add garlic and ground beef. Cook until the beef is browned, breaking it up as it cooks.
- Stir in taco seasoning and water. Simmer for 5 minutes until the mixture thickens. Remove from heat.
- Warm the black beans and corn in a saucepan or microwave.
- To assemble the bowl, start with a base of cooked rice.
- Top with the seasoned beef, black beans, corn, shredded cheese, pico de gallo, avocado, and sour cream.
- Garnish with fresh cilantro and a squeeze of lime juice.
- Serve immediately and enjoy!
