Description

This Pineapple Quick Bread is a moist and flavorful loaf bursting with tropical sweetness from crushed pineapple, complemented by warm cinnamon and optional nuts and coconut. Perfect for breakfast or a snack, it’s a simple, quick bread that comes together easily and bakes to golden perfection.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon

Wet Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) crushed pineapple in juice (do not drain)

Optional Add-ins

  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup shredded coconut (optional)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly and set aside to ensure your bread doesn’t stick.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until evenly combined, creating your dry base.
  3. Combine Wet Ingredients: In a large mixing bowl, beat the eggs with the granulated sugar until the mixture is smooth and well combined. Then add the vegetable oil, vanilla extract, and the can of crushed pineapple along with its juice. Stir everything together until fully blended for a moist batter.
  4. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently and mixing just until combined. Avoid over-mixing to keep the bread tender.
  5. Add Nuts and Coconut: Fold in chopped walnuts or pecans and shredded coconut if you choose to include them, distributing them evenly throughout the batter.
  6. Fill Loaf Pan and Bake: Pour the prepared batter into the greased loaf pan and smooth the top with a spatula. Place the pan in the oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the Bread: Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing to preserve texture.

Notes

  • The bread develops more flavor the next day; store tightly wrapped at room temperature or refrigerate to extend freshness.
  • For a sweeter finish, drizzle a simple glaze made from powdered sugar and pineapple juice over the cooled bread.
