Description

Pineapple Fluff is a light, creamy, and refreshing dessert made with crushed pineapple, whipped topping, and mini marshmallows. It’s perfect for summer gatherings or potlucks.

Ingredients

Units Scale
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup mini marshmallows
  • 1/2 cup shredded sweetened coconut (optional)
  • 1 container (8 oz) whipped topping, thawed
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. In a large mixing bowl, combine the undrained crushed pineapple and the instant vanilla pudding mix. Stir until well combined and thickened slightly.
  2. Add the mini marshmallows and shredded coconut (if using), and mix well.
  3. Fold in the whipped topping gently until fully incorporated.
  4. Stir in the chopped nuts if desired.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
  6. Serve chilled and enjoy.

Notes

  • You can substitute coconut with extra marshmallows or chopped fruit for added texture.
  • For a lighter version, use sugar-free pudding and light whipped topping.
  • Tastes best when chilled for several hours or overnight.
