Description

A sweet and savory Pineapple BBQ Chicken with Bacon dish, combining juicy chicken breasts, smoky bacon, and tangy pineapple BBQ sauce for a flavorful meal perfect for weeknights or summer gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup BBQ sauce
  • 6 slices bacon
  • 1/2 cup crushed pineapple (drained)
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix pineapple juice, BBQ sauce, crushed pineapple, soy sauce, garlic powder, and onion powder. Set aside.
  3. Season chicken breasts with salt and pepper.
  4. Heat olive oil in a skillet over medium heat and sear chicken for 2-3 minutes on each side until lightly browned.
  5. Wrap each chicken breast with 1-2 slices of bacon.
  6. Place chicken in a baking dish and pour the pineapple BBQ mixture over the top.
  7. Bake uncovered for 30-35 minutes, or until the chicken is fully cooked (internal temp of 165°F/74°C) and bacon is crispy.
  8. Garnish with fresh parsley if desired and serve hot.
