- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup BBQ sauce
- 6 slices bacon
- 1/2 cup crushed pineapple (drained)
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix pineapple juice, BBQ sauce, crushed pineapple, soy sauce, garlic powder, and onion powder. Set aside.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and sear chicken for 2-3 minutes on each side until lightly browned.
- Wrap each chicken breast with 1-2 slices of bacon.
- Place chicken in a baking dish and pour the pineapple BBQ mixture over the top.
- Bake uncovered for 30-35 minutes, or until the chicken is fully cooked (internal temp of 165°F/74°C) and bacon is crispy.
- Garnish with fresh parsley if desired and serve hot.
