Description

These Pie Crust Cinnamon Rolls are a quick and easy treat made with refrigerated pie crust, buttery cinnamon sugar filling, and optional sweet icing. Perfect for using leftover pie dough, they bake into warm, golden mini rolls that satisfy any sweet craving with minimal effort.

Ingredients

Scale

Main Ingredients

  • 1 sheet refrigerated pie crust (or homemade)
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • pinch of salt

Optional Icing

  • 1/2 cup powdered sugar
  • 1–2 teaspoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy clean-up.
  2. Prepare Pie Crust: Unroll the pie crust onto a lightly floured surface to prevent sticking while rolling. Spread the softened butter evenly across the entire surface of the crust to create a moist, flavorful base for the filling.
  3. Mix Filling & Sprinkle: In a small bowl, combine the brown sugar, cinnamon, and a pinch of salt. Sprinkle this cinnamon sugar mixture evenly over the buttered pie crust to provide sweetness and spice.
  4. Roll and Slice: Starting at one edge, roll the pie crust tightly into a log shape. Using a sharp knife, slice the log into 1/2-inch thick rounds, which will form individual mini cinnamon rolls.
  5. Arrange on Baking Sheet: Place each roll flat onto the prepared baking sheet, spacing them slightly apart to allow for expansion during baking.
  6. Bake: Bake in the preheated oven for 12–15 minutes, or until the rolls are golden brown and bubbly, indicating they are fully cooked and caramelized.
  7. Cool and Ice (Optional): Allow the rolls to cool slightly. To make the optional icing, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle the icing over the warm rolls for added sweetness and flavor.

Notes

  • Perfect for using up leftover pie dough.
  • Add chopped nuts or raisins to the filling for extra flavor and texture.
  • Best enjoyed warm for the softest texture and richest flavor.
