Description

Peruvian Chicken & Rice with Green Sauce is a flavorful and comforting dish that combines juicy chicken, aromatic rice, and a tangy, herbaceous green sauce made with cilantro, jalapeños, and lime. This dish captures the bold flavors of Peru, perfect for a family dinner or special occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup white rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • For the Green Sauce:
  • 1 cup fresh cilantro leaves
  • 12 jalapeños, seeds removed
  • 1/4 cup mayonnaise
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons white vinegar
  • 1 garlic clove
  • Salt, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and cumin. Cook the chicken for about 5-6 minutes per side, until golden and cooked through. Remove and set aside.
  2. In the same skillet, add chopped onion and minced garlic. Cook until softened, about 3-4 minutes.
  3. Add the rice to the skillet, stirring to coat the rice in the oil and onions. Cook for 1-2 minutes.
  4. Pour in the chicken broth, bring to a simmer, cover, and cook for 18-20 minutes, until the rice is tender and the liquid is absorbed.
  5. While the rice is cooking, prepare the green sauce. Combine cilantro, jalapeños, mayonnaise, olive oil, lime juice, vinegar, garlic, and salt in a blender or food processor. Blend until smooth.
  6. Once the rice is done, fluff it with a fork. Serve the chicken breasts over the rice and drizzle generously with the green sauce.
  7. Garnish with additional cilantro and lime wedges, if desired.

Notes

  • You can adjust the heat level of the green sauce by adding more or fewer jalapeños.
  • For a spicier sauce, include some of the jalapeño seeds.
  • This dish can be served with a side of vegetables or a simple salad for a complete meal.
  • If you prefer, you can grill the chicken instead of pan-frying it for a different flavor.
