- 4 boneless, skinless chicken breasts
- 1 cup white rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon ground cumin
- Salt and pepper, to taste
- For the Green Sauce:
- 1 cup fresh cilantro leaves
- 1–2 jalapeños, seeds removed
- 1/4 cup mayonnaise
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 2 tablespoons white vinegar
- 1 garlic clove
- Salt, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and cumin. Cook the chicken for about 5-6 minutes per side, until golden and cooked through. Remove and set aside.
- In the same skillet, add chopped onion and minced garlic. Cook until softened, about 3-4 minutes.
- Add the rice to the skillet, stirring to coat the rice in the oil and onions. Cook for 1-2 minutes.
- Pour in the chicken broth, bring to a simmer, cover, and cook for 18-20 minutes, until the rice is tender and the liquid is absorbed.
- While the rice is cooking, prepare the green sauce. Combine cilantro, jalapeños, mayonnaise, olive oil, lime juice, vinegar, garlic, and salt in a blender or food processor. Blend until smooth.
- Once the rice is done, fluff it with a fork. Serve the chicken breasts over the rice and drizzle generously with the green sauce.
- Garnish with additional cilantro and lime wedges, if desired.
Notes
- You can adjust the heat level of the green sauce by adding more or fewer jalapeños.
- For a spicier sauce, include some of the jalapeño seeds.
- This dish can be served with a side of vegetables or a simple salad for a complete meal.
- If you prefer, you can grill the chicken instead of pan-frying it for a different flavor.
