Peanut Butter Cup French Toast Rolls are a delightful twist on classic French toast, combining soft bread rolled around gooey peanut butter cups, dipped in a cinnamon-vanilla egg mixture, and pan-fried until golden. Perfect for a fun brunch or a sweet breakfast treat, these rolls can be enjoyed warm with optional powdered sugar or chocolate drizzle for an extra indulgence.
Ingredients
Scale
For the French Toast Rolls
- 8 slices soft sandwich bread (crusts removed)
- 8 mini peanut butter cups (or 4 regular, halved)
For the Egg Mixture
- 2 large eggs
- ¼ cup milk
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
For Coating and Frying
- 2 tablespoons granulated sugar (for coating)
- Pinch of ground cinnamon (mixed with sugar for coating)
- 2 tablespoons unsalted butter (for frying)
Optional Toppings
- Powdered sugar
- Chocolate drizzle or chocolate sauce
- Extra peanut butter drizzle
Instructions
- Prepare the Bread: Flatten each slice of bread using a rolling pin to create an even, thin surface that will easily roll without tearing.
- Assemble the Rolls: Place a peanut butter cup at one end of each flattened bread slice and roll it tightly around the candy. Press the edges firmly to seal and prevent the filling from leaking during cooking.
- Mix the Egg Batter: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until fully combined and smooth.
- Prepare the Coating: In a separate small bowl, combine the granulated sugar with a pinch of cinnamon to create the cinnamon sugar coating.
- Cook the Rolls: Heat the unsalted butter in a skillet over medium heat. Dip each roll into the egg mixture, allowing any excess to drip off, then place each roll seam-side down in the skillet. Cook each side for about 2–3 minutes or until golden brown and crispy on all sides.
- Coat in Cinnamon Sugar: Immediately after removing from the skillet, roll the hot French toast rolls in the cinnamon sugar mixture to coat evenly.
- Serve: Serve the rolls warm. Optionally, dust with powdered sugar or drizzle with chocolate sauce or extra peanut butter for added flavor and presentation.
Notes
- Use soft white bread or brioche for best texture and ease of rolling.
- These rolls are best served fresh but can be reheated in an oven or air fryer to maintain crispiness.
- Paired well with fresh fruit or a side of maple syrup for extra sweetness.
- Can be customized with different fillings such as Nutella or fruit preserves instead of peanut butter cups.
