- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Instructions
- In a large bowl, mix peanut butter, butter, vanilla, and powdered sugar until well combined and smooth.
- Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes, or until firm.
- Melt chocolate chips and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate using a fork or toothpick, letting the excess drip off.
- Place back on the parchment-lined sheet and refrigerate until chocolate is set.
- Store in an airtight container in the fridge.
Notes
- Use crunchy peanut butter for added texture.
- White or dark chocolate can be used for variety.
- Chill the peanut butter mixture longer if it’s too soft to roll.
