Description

These no-bake peanut butter balls with Rice Krispies are a deliciously crunchy and sweet treat, perfect for snacking or gifting during the holidays.

Ingredients

Units Scale
  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)

Instructions

  1. In a large mixing bowl, combine peanut butter, softened butter, and vanilla extract. Mix until smooth.
  2. Gradually add powdered sugar and mix until well incorporated.
  3. Fold in the Rice Krispies cereal gently until evenly combined.
  4. Shape the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  5. Chill the balls in the refrigerator for at least 30 minutes to firm up.
  6. In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring between each until smooth.
  7. Dip each ball into the melted chocolate using a fork or dipping tool, then return to the parchment-lined sheet.
  8. Refrigerate until the chocolate is set, about 30 minutes.

Notes

  • Use crunchy peanut butter for added texture if desired.
  • Store in an airtight container in the fridge for up to 2 weeks.
  • You can freeze them for longer storage—up to 2 months.
