- 1 1/2 cups powdered sugar
- 2 cups Rice Krispies cereal
- 1 1/2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Instructions
- In a large mixing bowl, combine peanut butter, softened butter, and vanilla extract. Mix until smooth.
- Gradually add powdered sugar and mix until well incorporated.
- Fold in the Rice Krispies cereal gently until evenly combined.
- Shape the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Chill the balls in the refrigerator for at least 30 minutes to firm up.
- In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring between each until smooth.
- Dip each ball into the melted chocolate using a fork or dipping tool, then return to the parchment-lined sheet.
- Refrigerate until the chocolate is set, about 30 minutes.
