Description
A flavorful and hearty salad featuring oven-baked parmesan-crusted salmon atop crisp romaine lettuce with creamy Caesar dressing, crunchy croutons, and shaved parmesan.
Ingredients
- 4 salmon fillets (about 6 oz each)
- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 large head romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 1/2 cup shaved Parmesan cheese
- 1 cup croutons
- 1 teaspoon garlic powder (optional)
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix grated Parmesan, panko breadcrumbs, olive oil, garlic powder, lemon zest, salt, and pepper.
- Place the salmon fillets on the baking sheet, skin-side down. Press the Parmesan mixture onto the tops of the fillets.
- Bake for 12–15 minutes, or until the salmon is cooked through and the crust is golden brown.
- Meanwhile, place chopped romaine in a large bowl. Toss with Caesar dressing.
- Divide the dressed lettuce among plates. Top with croutons and shaved Parmesan.
- Place a Parmesan-crusted salmon fillet on top of each salad. Serve immediately.
Notes
- Use freshly grated Parmesan for best flavor and texture.
- Substitute Greek yogurt Caesar dressing for a lighter option.
- You can grill the salmon instead of baking if desired.
