Description

A flavorful and hearty salad featuring oven-baked parmesan-crusted salmon atop crisp romaine lettuce with creamy Caesar dressing, crunchy croutons, and shaved parmesan.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 large head romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/2 cup shaved Parmesan cheese
  • 1 cup croutons
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon lemon zest (optional)


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix grated Parmesan, panko breadcrumbs, olive oil, garlic powder, lemon zest, salt, and pepper.
  3. Place the salmon fillets on the baking sheet, skin-side down. Press the Parmesan mixture onto the tops of the fillets.
  4. Bake for 12–15 minutes, or until the salmon is cooked through and the crust is golden brown.
  5. Meanwhile, place chopped romaine in a large bowl. Toss with Caesar dressing.
  6. Divide the dressed lettuce among plates. Top with croutons and shaved Parmesan.
  7. Place a Parmesan-crusted salmon fillet on top of each salad. Serve immediately.

Notes

  • Use freshly grated Parmesan for best flavor and texture.
  • Substitute Greek yogurt Caesar dressing for a lighter option.
  • You can grill the salmon instead of baking if desired.
