Ingredients

  • 1 lb ground chicken

  • 1 tablespoon vegetable oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 1 can (8 oz) water chestnuts, drained and chopped

  • 2 green onions, sliced

  • 1/4 cup hoisin sauce

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon sesame oil

  • 1 teaspoon sriracha (optional, for heat)

  • Salt and pepper to taste

  • 1 head butter lettuce or iceberg lettuce, leaves separated

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.

  2. Add diced onion and cook for 2–3 minutes until softened.

  3. Stir in garlic and ginger and cook for 1 more minute.

  4. Add the ground chicken and cook until browned, breaking it up with a spoon as it cooks.

  5. Drain any excess fat, if needed.

  6. Stir in water chestnuts and green onions.

  7. Add hoisin sauce, soy sauce, rice vinegar, sesame oil, and sriracha. Mix well and cook for 2–3 minutes until heated through.

  8. Taste and adjust seasoning with salt and pepper if needed.

  9. Serve the mixture in lettuce cups. Garnish with extra green onions if desired.

Notes

  • For extra crunch, top with chopped peanuts.

  • Ground turkey can be used as a substitute for chicken.

  • These are best served fresh, but you can refrigerate the filling separately for up to 3 days.
