Ingredients
Scale
Butternut Squash
- 1 medium butternut squash (about 2-3 pounds), peeled, seeded and cut into 1-inch cubes
Seasonings
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme (optional)
Optional Sweetener
- 1 tablespoon maple syrup or honey (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the butternut squash.
- Toss Squash with Seasonings: In a large bowl, toss the cubed butternut squash with olive oil, salt, black pepper, garlic powder, and dried thyme if using. Ensure every piece is evenly coated for consistent flavor.
- Arrange on Baking Sheet: Spread the seasoned squash cubes in a single layer on a baking sheet lined with parchment paper or a silicone mat. This helps for even cooking and easy cleanup.
- Roast the Squash: Place the baking sheet in the preheated oven and roast for 25-30 minutes. Stir the squash halfway through cooking to promote even caramelization and tenderness.
- Add Sweetener (Optional): During the last 5 minutes of roasting, drizzle maple syrup or honey over the squash. Toss gently to coat it evenly, allowing the sweetness to glaze the cubes.
- Serve Warm: Remove the squash from the oven once tender and lightly caramelized on the edges. Serve warm as a flavorful side dish or incorporate into salads and grain bowls.
Notes
- For variation, try adding a sprinkle of smoked paprika or cinnamon for a different flavor profile.
- Roasted butternut squash pairs well with fresh herbs like parsley or sage added after roasting.
- You can also roast the squash cubes alongside other root vegetables for a colorful medley.
- To save time, buy pre-cut butternut squash from the store if available.
