Description

This bright and citrusy orange poke cake is soft, moist, and bursting with flavor. It’s soaked in a zesty honey-orange glaze that seeps into every bite, making it a perfect spring or summer dessert. Ingredients

For the Cake:

  • 1 box (15.25 oz) orange cake mix

  • 1 cup orange juice

  • 1/2 cup vegetable oil

  • 3 large eggs

  • 1 tablespoon orange zest

For the Honey-Orange Glaze:

  • 1/2 cup honey

  • 1/4 cup fresh orange juice

  • 1 tablespoon orange zest

  • 1 teaspoon vanilla extract

Optional Toppings:

 

  • Whipped cream

  • Orange slices or zest for garnish


Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • Prepare the cake mix in a large bowl. Combine the cake mix, orange juice, oil, eggs, and orange zest. Beat with a hand mixer or whisk for about 2 minutes until smooth.

  • Pour the batter into the prepared baking dish and smooth the top.

  • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

  • Let the cake cool for 10 minutes. Then, using the handle of a wooden spoon, poke holes all over the cake.

  • Make the glaze: In a small saucepan over low heat, combine honey, orange juice, orange zest, and vanilla. Stir until warmed through, about 2–3 minutes (do not boil).

  • Pour the glaze evenly over the warm cake, letting it soak into the holes.

 

  • Cool completely before slicing. Top with whipped cream and garnish with orange slices or zest, if desired.


Notes

  • For extra citrus flavor, add a few drops of orange extract to the glaze.

  • Store leftovers covered in the fridge for up to 3 days.

  • Great served chilled or at room temperature.
