Description

This Onion Beef Fried Rice is a quick and flavorful stir-fried dish featuring tender beef sirloin, sweet onions, fragrant garlic, and day-old rice all tossed together with soy sauce and eggs for a perfect weeknight meal.

Ingredients

Scale

Protein and Vegetables

  • 1 lb beef sirloin, thinly sliced
  • 1 large sweet onion, sliced
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 2 large eggs, lightly beaten

Rice and Sauces

  • 3 cups cooked day-old rice
  • 3 tbsp low-sodium soy sauce

Oils and Seasonings

  • 2 tbsp vegetable oil
  • Freshly cracked black pepper to taste

Instructions

  1. Prepare Your Ingredients: Gather all ingredients on a clean surface. Slice the sweet onion and green onions; cut the beef sirloin into thin strips to ensure quick, even cooking.
  2. Heat Up Your Pan: Place a large wok or frying pan over medium-high heat and add the vegetable oil. Heat until the oil is shimmering, indicating it is hot enough for stir-frying.
  3. Sauté Onions and Garlic: Add the sliced onion to the hot oil and cook until it becomes translucent, releasing a sweet aroma. Then, add the minced garlic and cook for about 30 seconds until fragrant, stirring constantly to avoid burning.
  4. Cook the Beef: Push the onions to one side of the pan and add the beef strips to the empty side. Cook the beef until browned on all sides, about 3 to 4 minutes, ensuring it is cooked through but still tender.
  5. Add Rice and Soy Sauce: Add the cooked day-old rice to the pan, breaking up any clumps using a spatula. Pour the low-sodium soy sauce over the mixture and stir well to evenly distribute the flavors throughout the rice, onions, and beef.
  6. Add Eggs & Final Touches: Create a well in the center of the pan and pour in the beaten eggs. Scramble them gently, then fold the cooked eggs into the rice mixture. Finally, add the chopped green onions and freshly cracked black pepper to taste. Mix everything thoroughly before serving.

Notes

  • Using day-old rice helps prevent the fried rice from becoming mushy by keeping the grains separate.
  • Be sure to slice the beef thinly to ensure it cooks quickly and remains tender.
  • Adjust soy sauce amount based on your preference for saltiness.
  • For extra flavor, you can add a dash of sesame oil at the end of cooking.
  • This dish pairs well with steamed vegetables or a side of kimchi for a Korean twist.
