Description

One Pot Lasagna Soup is a comforting and hearty Italian-American dish that combines all the flavors of classic lasagna in a warm, easy-to-make soup. Made with ground beef or Italian sausage, tomato sauce, herbs, broken lasagna noodles, and a creamy mix of ricotta and cheeses, this soup is perfect for a family-friendly meal ready in just 35 minutes.

Ingredients

Scale

Meat and Vegetables

  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced

Tomato Base and Herbs

  • 1 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken or beef broth

Pasta and Cheese

  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Seasoning and Garnish

  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Brown the Meat: In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, about 5–6 minutes. Drain excess fat if needed to reduce greasiness.
  2. Sauté Aromatics: Add diced onion to the pot and cook until softened, about 3 minutes. Stir in minced garlic and tomato paste, cooking for another 1–2 minutes until fragrant and well combined.
  3. Add Herbs and Liquids: Stir in dried basil, dried oregano, and crushed red pepper flakes if using. Then add crushed tomatoes and chicken or beef broth. Bring the mixture to a boil to combine flavors.
  4. Cook the Noodles: Add the broken lasagna noodles to the pot and reduce heat to a simmer. Cook uncovered for 12–15 minutes, stirring occasionally, until noodles are tender but not mushy.
  5. Season the Soup: Taste the soup and season with salt and black pepper according to your preference for a balanced flavor.
  6. Add Cheese and Finish: Turn off the heat and stir in the ricotta cheese until the soup becomes creamy and smooth. Then gently sprinkle shredded mozzarella and grated Parmesan over the soup and stir just enough to melt the cheeses.
  7. Serve: Ladle the soup into bowls and garnish with fresh basil or parsley if desired, enhancing aroma and presentation. Serve immediately for best taste.

Notes

  • For a vegetarian version, omit the meat and use vegetable broth instead of chicken or beef broth.
  • To make the soup creamier, stir in a splash of heavy cream or add extra ricotta cheese at the end.
  • Use fresh herbs if available for a brighter flavor, adjusting quantities accordingly.
  • Broken lasagna noodles cook faster than whole noodles and better suit the soup texture.
