- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 cup green beans, trimmed
- 1 small red onion, sliced
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix balsamic vinegar, honey, garlic, basil, oregano, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Season chicken breasts with salt and pepper, then sear for 2-3 minutes per side until golden brown.
- Remove chicken and set aside. Add vegetables to the pan and sauté for 3-4 minutes.
- Place chicken back into the pan over the vegetables.
- Pour the balsamic mixture over the chicken and vegetables.
- Transfer the skillet to the oven and bake for 20-25 minutes, until chicken is cooked through.
- Remove from oven, let rest for 5 minutes before serving.

- For extra flavor, marinate chicken in the balsamic mixture for 30 minutes before cooking.
- Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
