Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, trimmed
  • 1 small red onion, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix balsamic vinegar, honey, garlic, basil, oregano, salt, and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Season chicken breasts with salt and pepper, then sear for 2-3 minutes per side until golden brown.
  5. Remove chicken and set aside. Add vegetables to the pan and sauté for 3-4 minutes.
  6. Place chicken back into the pan over the vegetables.
  7. Pour the balsamic mixture over the chicken and vegetables.
  8. Transfer the skillet to the oven and bake for 20-25 minutes, until chicken is cooked through.
  9. Remove from oven, let rest for 5 minutes before serving.

  • For extra flavor, marinate chicken in the balsamic mixture for 30 minutes before cooking.
  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
