Instructions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.

Add the egg and vanilla extract and stir until combined.

Sprinkle in the flour, baking soda, cinnamon, and salt. Stir until just combined.

Fold in the oats and any optional mix-ins like raisins or chocolate chips.

Scoop about 2 tablespoons of dough per cookie onto the baking sheet, spacing them 2 inches apart.

Bake for 10–12 minutes, or until the edges are lightly golden and the centers are just set.

Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
