These nut-free muesli bars are chewy, lightly sweet, and packed with wholesome ingredients like oats, seeds, and dried fruit. They’re perfect for lunchboxes or an on-the-go snack and safe for nut-free environments.
Ingredients

2 cups rolled oats

1 cup puffed rice cereal

1/2 cup sunflower seeds

1/4 cup pumpkin seeds

1/2 cup shredded coconut

1/2 cup dried cranberries (or raisins)

1/4 cup honey or maple syrup

1/4 cup brown sugar

1/4 cup coconut oil or unsalted butter

1/2 tsp vanilla extract

Pinch of salt
Instructions

Line an 8×8-inch (20×20 cm) baking dish with parchment paper.

In a large bowl, mix together the oats, puffed rice, sunflower seeds, pumpkin seeds, coconut, and dried cranberries.

In a small saucepan, combine the honey (or maple syrup), brown sugar, and coconut oil over medium heat. Stir until sugar dissolves and mixture starts to bubble.

Remove from heat and stir in vanilla and a pinch of salt.

Pour the warm mixture over the dry ingredients and mix well until everything is coated.

Press the mixture firmly into the prepared pan. Use the back of a spoon or your hands (dampened) to flatten it evenly.

Refrigerate for at least 2 hours, or until firm.

Once set, lift out of the pan and cut into bars.

Swap dried cranberries with other dried fruits like apricots, dates, or sultanas.

For a vegan version, use maple syrup and coconut oil.

Store in the fridge for up to 1 week or freeze for longer storage.
