Description
A quick and easy creamy no‑bake pie that sets in the fridge—no oven required!
Ingredients
- 1 (9‑inch) graham cracker crust (store‑bought or homemade)
- 8 oz cream cheese, softened
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup sour cream
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
- Zest of 1 lemon (optional)
- Whipped cream and lemon slices for garnish (optional)
Instructions
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the sweetened condensed milk, mixing until fully incorporated.
- Stir in sour cream, lemon juice, vanilla extract, and lemon zest until the filling is silky.
- Pour the filling into the graham cracker crust, smoothing the top with a spatula.
- Cover the pie and refrigerate for at least 4 hours, or preferably overnight, until set.
- Before serving, garnish with whipped cream and lemon slices if desired.
Notes
- For a different flavor, substitute lemon juice with lime or orange.
- Add a handful of fresh berries on top for extra color and taste.
- If the crust is too crumbly, press in a bit of melted butter to help it hold.
- Allowing it to chill overnight makes slicing cleaner.
