Ingredients
Scale
Dry Ingredients
- 2 cups of pecans
- 2 cups of sweetened shredded coconut
- 1 1/2 cups of granulated sugar
- 1 cup of brown sugar
- 1/2 teaspoon of salt
Wet Ingredients
- 1/2 cup of evaporated milk
- 1/2 cup of light corn syrup
- 1/2 cup (one stick) of unsalted butter
- 1 teaspoon of vanilla extract
Instructions
- Combine Ingredients: In a sizeable saucepan, combine the granulated sugar, brown sugar, evaporated milk, light corn syrup, and unsalted butter. Heat over medium-high temperature, stirring continuously until the mixture is fully combined and smooth.
- Boil the Mixture: Allow the mixture to come to a boil and maintain this boil for 3 minutes. This helps to thicken the praline base and develop the characteristic caramel flavor. Then remove the saucepan from heat.
- Add Flavorings: Immediately stir in the vanilla extract and salt to enhance the flavor and balance the sweetness.
- Incorporate Nuts and Coconut: Gradually add the shredded coconut and pecans to the mixture. Stir continuously for 3-4 minutes as the praline thickens and starts to cool, ensuring even distribution of ingredients.
- Portion the Cookies: Using a tablespoon or small scoop, drop portioned spoonfuls of the praline mixture onto baking sheets lined with wax paper.
- Set the Cookies: Let the cookies cool and solidify at room temperature. For quicker setting, place them in the freezer. Once hardened, they are ready to serve and enjoy.
Notes
- Make sure to stir continuously to prevent the mixture from burning or sticking to the pan.
- Using wax paper or parchment paper prevents the cookies from sticking to the baking sheet.
- For a quicker treat, freezing the cookies after portioning helps them set faster.
- Store the cookies in an airtight container to maintain freshness.
- Feel free to substitute pecans with walnuts or almonds if preferred.
