Instructions
- In a medium saucepan over low heat, melt the peanut butter, coconut oil, and honey (or maple syrup) until smooth and combined.
- Remove from heat and stir in the vanilla extract and salt.
- Add the rolled oats and mix until fully coated.
- Let the mixture cool slightly before folding in the mini chocolate chips if using.
- Line a muffin tin with paper liners and divide the mixture evenly among the cups, pressing down firmly.
- Refrigerate for at least 1 hour or until firm.
- Remove from the muffin tin and store in the refrigerator or freezer.
