Description

These No Bake Peanut Butter Oat Cups are a quick and healthy treat made with simple ingredients, perfect for a snack or dessert without turning on the oven.


Ingredients

  • 1 cup creamy peanut butter
  • 1/4 cup coconut oil
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. In a medium saucepan over low heat, melt the peanut butter, coconut oil, and honey (or maple syrup) until smooth and combined.
  2. Remove from heat and stir in the vanilla extract and salt.
  3. Add the rolled oats and mix until fully coated.
  4. Let the mixture cool slightly before folding in the mini chocolate chips if using.
  5. Line a muffin tin with paper liners and divide the mixture evenly among the cups, pressing down firmly.
  6. Refrigerate for at least 1 hour or until firm.
  7. Remove from the muffin tin and store in the refrigerator or freezer.
