Ingredients
Scale
Crust
- 3 cups graham cracker crumbs
- 3/4 cup butter, melted
Lemon Layer
- 2 (8 oz.) packages cream cheese, room temperature
- 1 cup granulated sugar
- 1/3 cup lemon juice
- 1 cup 2% milk
- 3.4 oz. box instant lemon pudding mix
Blueberry Layer
- 21 oz. can blueberry pie filling
Topping
- 16 oz. tub frozen whipped topping, thawed
- Reserved 1/2 cup graham cracker crumbs (optional topping)
Instructions
- Prepare Graham Cracker Crust: In a bowl, combine the graham cracker crumbs with melted butter. Reserve 1/2 cup of this mixture for topping later. Press the remaining crumb mixture firmly into the bottom of a 13 x 9 inch dish to form an even crust. Chill the crust in the refrigerator to set.
- Make Lemon Layer: In a large mixing bowl, beat the cream cheese and sugar together until the mixture is smooth and fluffy. Add lemon juice and milk, mixing well to combine. Gradually add the dry instant lemon pudding mix and continue beating until fully incorporated and smooth. Spread this lemon pudding mixture evenly over the chilled graham cracker crust.
- Apply Blueberry Layer: Spoon the blueberry pie filling gently over the lemon layer, spreading it evenly without mixing layers, creating a distinct blueberry topping.
- Add Whipped Topping and Crumbs: Spread the thawed whipped topping evenly over the blueberry layer. Sprinkle the reserved 1/2 cup graham cracker crumbs on top for a crunchy finish.
- Chill Dessert: Refrigerate the assembled dessert for at least 2 hours to allow all layers to set and flavors to meld. Keep chilled until serving.
Notes
- For best results, ensure the cream cheese is fully softened before mixing to achieve a smooth lemon layer.
- Do not skip chilling the crust and dessert; it helps layers firm up and enhances flavor.
- Use instant lemon pudding mix for quick thickening without cooking.
- Optional: Garnish with fresh blueberries or lemon zest for extra visual appeal and flavor.
- This dessert is best served chilled and consumed within 2 days for freshness.
