Ingredients
Scale
Main Ingredients
- 1 cup pitted Medjool dates
- 1 cup raw walnuts (or almonds)
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons mini chocolate chips (optional)
Instructions
- Grind Nuts: In a food processor, pulse the walnuts until they are finely ground but not turned into a paste. This creates a crunchy base for the bites.
- Add Remaining Ingredients: Add the pitted dates, cocoa powder, vanilla extract, and a pinch of salt to the processor. Blend until the mixture becomes sticky and forms a dough-like consistency that holds together when pressed.
- Incorporate Chocolate Chips: If using, fold in the mini chocolate chips by hand to distribute evenly without over-processing.
- Form Bites: Scoop about 1 tablespoon of the mixture and roll it between your palms to create bite-sized balls. Repeat with the rest of the mixture.
- Chill: Place the brownie bites on a parchment-lined tray and refrigerate for 30 minutes to firm up and enhance flavors.
- Storage: Store the chilled bites in an airtight container in the refrigerator for up to 1 week or freeze for up to 1 month for longer preservation.
Notes
- Use Medjool dates for natural sweetness and soft texture; soak in warm water for 10 minutes if too dry.
- Walnuts can be substituted with almonds or pecans based on preference.
- Ensure not to overprocess nuts to maintain a pleasant texture.
- For extra flavor, add a pinch of cinnamon or espresso powder to the mixture.
- Mini chocolate chips add texture and melty chocolate bursts but can be omitted for a less sweet version.
- Keep the bites refrigerated to maintain firmness.
