- 2 cups rolled oats
- 1 scoop vanilla protein powder
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 1/2 cups unsweetened almond milk
- 1/4 cup maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp melted coconut oil
- 1 1/2 cups mixed berries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, mix together the oats, protein powder, baking powder, cinnamon, and salt.
- In another bowl, whisk together the almond milk, maple syrup, egg, vanilla extract, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Gently fold in the mixed berries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35–40 minutes or until the top is golden brown and the center is set.
- Allow to cool for 10 minutes before slicing and serving.
Notes
- You can substitute the almond milk with any milk of choice.
- Frozen berries can be used—no need to thaw.
- Store leftovers in the fridge for up to 5 days or freeze for longer storage.
