- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 1/2 tsp peppermint extract
- 1 tsp vanilla extract
- 2 cups semi-sweet chocolate chips
- Green food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs, one at a time, mixing well after each addition.
- Stir in peppermint extract, vanilla extract, and green food coloring if using.
- Gradually add the flour mixture to the wet ingredients, mixing just until combined.
- Fold in the chocolate chips.
- Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9-11 minutes, or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can substitute mint chips for chocolate chips for extra minty flavor.
- Adjust green food coloring to your preferred shade or omit entirely.
- Store cookies in an airtight container for up to 5 days.
