Description
Mini Pepper Nachos are a low-carb, colorful twist on traditional nachos, using mini sweet peppers as the base instead of tortilla chips. They’re loaded with seasoned meat, melted cheese, and fresh toppings—perfect for a healthy snack or party appetizer.
Ingredients
- 1 lb ground turkey or ground beef
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 15-20 mini sweet peppers, halved and seeded
- 1 cup shredded cheddar cheese
- 1/4 cup diced red onion
- 1/4 cup sliced black olives
- 1/4 cup diced tomatoes
- 2 tbsp chopped fresh cilantro
- Sour cream or Greek yogurt for topping (optional)
- 1 jalapeño, sliced (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add ground turkey or beef and cook until browned, about 6-8 minutes.
- Stir in chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for another 2-3 minutes. Remove from heat.
- Arrange mini pepper halves on a baking sheet in a single layer, cut side up.
- Fill each pepper with cooked meat mixture and sprinkle with shredded cheddar cheese.
- Bake in the preheated oven for 10-12 minutes, or until cheese is melted and bubbly.
- Remove from oven and top with red onion, black olives, diced tomatoes, and jalapeños if using.
- Sprinkle with fresh cilantro and serve warm with a dollop of sour cream or Greek yogurt if desired.
Notes
- You can substitute ground meat with black beans or lentils for a vegetarian version.
- Add guacamole or avocado slices for extra creaminess.
- These are best served fresh but can be prepped ahead of time and baked just before serving.
