Description

These mini meatball subs are the perfect bite-sized treat, loaded with flavorful meatballs, melted cheese, and tangy marinara sauce. Great for parties, game day, or a fun family dinner!

Ingredients

  • 1 lb ground beef

  • 1/4 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 large egg

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Salt and pepper, to taste

  • 1 cup marinara sauce

  • 8 mini sub rolls

  • 1 1/2 cups shredded mozzarella cheese

  • Olive oil, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet with olive oil.

  2. In a large bowl, mix together the ground beef, breadcrumbs, Parmesan, egg, garlic powder, oregano, basil, salt, and pepper.

  3. Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

  4. Bake the meatballs for 15-20 minutes, until they’re browned and cooked through.

  5. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.

  6. Once the meatballs are done, add them to the marinara sauce and simmer for 5 minutes to allow the flavors to meld.

  7. Cut the mini sub rolls and lightly toast them if desired.

  8. Spoon 2-3 meatballs into each sub roll and top with shredded mozzarella cheese.

  9. Place the subs under the broiler for 1-2 minutes until the cheese is melted and bubbly.

  10. Serve immediately and enjoy!

Notes

  • You can use store-bought or homemade marinara sauce.

  • Feel free to add some fresh basil or parsley for extra flavor.

  • For a spicier version, add red pepper flakes to the sauce.
