These mini meatball subs are the perfect bite-sized treat, loaded with flavorful meatballs, melted cheese, and tangy marinara sauce. Great for parties, game day, or a fun family dinner!
Ingredients

1 lb ground beef

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

1 tsp garlic powder

1 tsp dried oregano
-
1 tsp dried basil

Salt and pepper, to taste

1 cup marinara sauce
-
8 mini sub rolls
-
1 1/2 cups shredded mozzarella cheese

Olive oil, for greasing
Instructions

Preheat your oven to 375°F (190°C). Lightly grease a baking sheet with olive oil.

In a large bowl, mix together the ground beef, breadcrumbs, Parmesan, egg, garlic powder, oregano, basil, salt, and pepper.

Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

Bake the meatballs for 15-20 minutes, until they’re browned and cooked through.

While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.

Once the meatballs are done, add them to the marinara sauce and simmer for 5 minutes to allow the flavors to meld.

Cut the mini sub rolls and lightly toast them if desired.

Spoon 2-3 meatballs into each sub roll and top with shredded mozzarella cheese.

Place the subs under the broiler for 1-2 minutes until the cheese is melted and bubbly.

You can use store-bought or homemade marinara sauce.
