- Preheat Oven: Preheat your oven to 350ºF (175ºC). Lightly spray a mini muffin pan with cooking spray and set aside to prepare for baking.
- Cream Butter and Sugar: In a large mixing bowl, cream together ½ cup softened butter and ½ cup sugar until the mixture becomes light and fluffy. This process incorporates air to help muffins rise nicely.
- Add Eggs and Applesauce: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the applesauce and vanilla extract for moisture and flavor.
- Combine Dry Ingredients and Mix: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients, stirring just until the batter is moistened; avoid overmixing to keep muffins tender.
