Description
Mexican Picadillo is a hearty, flavorful ground beef dish with a mix of vegetables, raisins, olives, and spices. It’s often served with rice or tortillas for a complete meal.
Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 1/2 cup carrots, diced
- 1/4 cup green olives, sliced
- 1/4 cup raisins
- 1/2 cup tomato sauce
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp cinnamon
- 1 tbsp vegetable oil
- 1/2 cup beef broth
- Salt and pepper, to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks.
- Add the chopped onion and garlic to the skillet and cook for about 3 minutes, until softened.
- Add the diced potatoes and carrots to the skillet and cook for about 5 minutes, stirring occasionally.
- Stir in the tomato sauce, beef broth, cumin, oregano, cinnamon, green olives, and raisins. Season with salt and pepper to taste.
- Cover and let the mixture simmer on low heat for about 20 minutes, or until the potatoes are tender and the flavors have melded together.
- Serve with rice or tortillas, and enjoy!
Notes
- For a spicier version, you can add some chopped jalapeños or chili powder.
- Picadillo can be stored in the refrigerator for up to 3 days and can be frozen for longer storage.
