  4. Cook tomatoes: Stir in the peeled and chopped tomatoes along with the optional tomato paste. Cook the mixture for 5–7 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens.
  5. Season: Season the tomato mixture with salt, black pepper, and cumin if desired, mixing well for balanced flavor.
  6. Add eggs: Crack the eggs directly over the tomato mixture in the skillet. Allow them to cook undisturbed for 1–2 minutes to begin setting.
  7. Cook eggs: Depending on your preference, gently stir the eggs to scramble slightly or leave them whole. Continue cooking until the eggs are just set but still soft and creamy.
