Description

Chicken and Marinade

  • 1 lb chicken breasts (about 2 large breasts)
  • 1/2 cup Greek dressing

Rice

  • 2 bags Success Boil-in-Bag White Rice (or 2 heaping cups cooked white rice)

Vegetables and Toppings

  • 1 (15.5 oz) can chickpeas, drained and rinsed
  • 1 large cucumber, chopped
  • 1 cup quartered grape tomatoes
  • 1/4 cup sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce
  • 1/4 cup hummus


Instructions

  1. Marinate the chicken: Place the chicken breasts in a bowl and pour the Greek dressing over them. Coat both sides of the chicken evenly with the dressing, then cover and refrigerate for at least 1 hour to allow the flavors to infuse.
  2. Prepare the rice: Cook the Success Boil-in-Bag White Rice according to the package instructions. Alternatively, use 2 heaping cups of cooked white rice if preferred.
  3. Cook the chicken: Preheat your air fryer to 400°F (200°C). Place the marinated chicken breasts in the air fryer basket and cook for 12-15 minutes, flipping halfway through, until the chicken is cooked through and has an internal temperature of 165°F (74°C). Alternatively, bake the chicken in a preheated oven at 400°F for about 20 minutes until fully cooked.
  4. Assemble bowls: Divide the cooked rice evenly into 4 bowls. Slice or chop the cooked chicken and arrange it on top of the rice. Add chickpeas, chopped cucumber, quartered grape tomatoes, sliced red onion, and crumbled feta cheese over each bowl. Dollop each bowl with tzatziki and hummus. Add extra Greek dressing on top if desired for added flavor.
