Description

These Meatball Sub Bites are a fun and delicious vegan appetizer featuring tender crescent roll dough filled with flavorful vegan meatballs, marinara sauce, and melted vegan mozzarella. Perfect for parties or a snack, these bite-sized treats combine the classic flavors of a meatball sub in a convenient, oven-baked form.

Ingredients

Scale

For the Meatball Sub Bites

  • 1 (8-ounce) sheet of crescent roll dough
  • ½ cup marinara sauce, divided
  • ½ cup vegan mozzarella shreds, divided
  • 12 premade vegan meatballs, thawed
  • Fresh minced basil for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the bites.
  2. Prepare Crescent Roll Dough: Unroll the crescent roll sheet on a lightly floured surface. Cut the dough into 12 equal squares arranged in 3 rows and 4 columns. Press each square into a lightly greased cupcake tin to form a cup shape.
  3. Assemble Meatball Sub Bites: Spoon 2 teaspoons of marinara sauce into the bottom of each dough cup. Sprinkle 2 teaspoons of vegan mozzarella shreds on top of the sauce in each cup. Place one thawed vegan meatball into each cup. Finally, add more mozzarella shreds and a bit more marinara sauce over the meatball to top off the bites.
  4. Bake: Place the cupcake tin in the preheated oven and bake for 10-13 minutes, or until the dough is light golden-brown and the cheese has melted and become bubbly.
  5. Serve: Remove the tin from the oven and allow the bites to cool for 5 minutes. Garnish with fresh minced basil and serve warm, optionally with extra marinara sauce on the side for dipping.

Notes

  • Make sure to lightly grease the cupcake tin to prevent sticking.
  • Thaw vegan meatballs fully before assembling to ensure even baking.
  • You can substitute vegan mozzarella with any plant-based cheese of your choice.
  • These bites are best enjoyed fresh but can be stored in the fridge and reheated.
  • Add a sprinkle of red pepper flakes or Italian seasoning for extra flavor.
