Instructions
- Prepare the Pancake Buns: In a mixing bowl, whisk together the self-rising flour, milk, egg, maple syrup, and vanilla extract (if using) until the batter is smooth and free of lumps.
- Cook Pancake Rounds: Heat a nonstick pan or griddle over medium heat and lightly grease it with butter or oil. Using a spoon or ladle, pour the batter into 3 to 4 inch rounds. Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes. Flip the pancakes and cook another 2 minutes or until golden brown on both sides. Remove from heat and set aside.
- Cook the Sausage Patties: In a skillet, heat butter or oil over medium heat. Add the breakfast sausage patties and cook thoroughly until nicely browned and cooked through, about 4 to 5 minutes per side depending on their thickness. Once done, drain on paper towels to remove excess fat.
- Assemble the Sandwiches: Place one pancake bun on a clean surface. Top it with a slice of cheddar cheese and then a hot sausage patty to allow the cheese to melt slightly. Cover with another pancake bun to complete the sandwich.
