Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 oz pasta (fettuccine or penne)
  • Fresh basil or parsley, chopped (for garnish)


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. In a large skillet, heat olive oil over medium heat. Add chicken and cook 5-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Pour in heavy cream and chicken broth. Stir and bring to a simmer.
  6. Add Parmesan cheese and red pepper flakes. Stir until cheese is melted and sauce is smooth.
  7. Slice cooked chicken and return to the skillet. Add cooked pasta and toss to combine.
  8. Simmer for 2-3 minutes until everything is heated through and well coated.
  9. Garnish with fresh basil or parsley before serving.
