Description

Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 3 cloves garlic, minced

  • 1/2 cup sun-dried tomatoes, chopped

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1/2 teaspoon crushed red pepper flakes (optional)

 

  • Fresh basil or parsley, for garnish


Instructions

  • Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper on both sides.

  • Add the chicken to the skillet and cook for 6-7 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.

  • In the same skillet, add garlic and sun-dried tomatoes. Cook for 1-2 minutes until fragrant.

  • Pour in the heavy cream, chicken broth, Parmesan cheese, oregano, basil, and crushed red pepper flakes (if using). Stir to combine and bring to a simmer.

  • Return the chicken to the skillet, spoon some of the sauce over the top, and let simmer for another 5-7 minutes until the sauce thickens.

 

  • Garnish with fresh basil or parsley before serving. Serve the chicken with your favorite side dishes like mashed potatoes, rice, or vegetables.


Notes

  • For a lower-fat version, you can substitute the heavy cream with half-and-half or a lighter cream alternative.

  • If you don’t have sun-dried tomatoes, you can use roasted red peppers or fresh tomatoes as an alternative.

 

  • This recipe is great for meal prep – just store leftovers in an airtight container in the fridge for up to 3 days.
