Sausage and Vegetables
- 1 pound beef sausage links
- 1 tablespoon olive oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
Sandwich Assembly
- 4 hoagie rolls or French bread rolls
- 2 tablespoons Creole mustard or spicy brown mustard
- ½ cup mayonnaise (optional)
- Pickled jalapeños or banana peppers (optional for topping)
Instructions
- Cook the Sausage: Heat the olive oil in a large skillet over medium heat. Add the beef sausage links and cook for 10–12 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add the sliced green and red bell peppers along with the sliced yellow onion. Sauté for 6–8 minutes until the vegetables soften and begin to caramelize slightly.
- Add Seasonings: Stir in the minced garlic, Cajun seasoning, smoked paprika, and black pepper. Cook for an additional minute, stirring frequently to coat the vegetables evenly and release the flavors.
- Warm Sausages with Vegetables: Slice the cooked sausages in half lengthwise and return them to the skillet with the pepper and onion mixture. Warm together for 2-3 minutes to allow flavors to meld.
- Prepare Rolls and Assemble: Toast the hoagie rolls if desired. Spread each roll with Creole mustard and mayonnaise. Fill each roll with the sausage halves and a generous portion of the pepper and onion mixture.
- Add Toppings and Serve: Top sandwiches with pickled jalapeños or banana peppers if using. Serve the sandwiches hot for best flavor and texture.
