Needhams, also known as Maine Potato Candy, are a classic New England treat made with mashed potatoes, powdered sugar, shredded coconut, and dipped in rich chocolate. Despite the potato base, you can’t taste it—it just makes the filling super creamy. These bite-sized candies are perfect for holidays or anytime you want something sweet and nostalgic.
Ingredients

1/2 cup mashed potatoes (plain, no seasoning)

1/2 cup unsalted butter, softened

1/2 teaspoon salt

1 teaspoon vanilla extract

1 (16 oz) bag powdered sugar (about 4 cups)

2 1/2 cups shredded sweetened coconut

1 (12 oz) package semisweet chocolate chips

2 tablespoons vegetable shortening (optional, for smoother melting chocolate)
Instructions

In a large mixing bowl, combine mashed potatoes, butter, salt, and vanilla. Mix until smooth and well combined.

Gradually stir in powdered sugar, one cup at a time, until the mixture is thick and creamy.

Fold in the shredded coconut until evenly mixed.

Press the mixture into a greased or parchment-lined 9×13-inch pan. Smooth out the top.

Refrigerate for 1-2 hours, or until firm.

Once firm, cut the chilled mixture into 1-inch squares.

In a microwave-safe bowl or using a double boiler, melt the chocolate chips and shortening together until smooth.

Dip each square into the melted chocolate, coating all sides. Use a fork to lift and tap off the excess chocolate.

Place dipped candies on a parchment-lined tray and let them set at room temperature or in the fridge until firm.

Store in an airtight container in the fridge for up to 2 weeks.

Make sure your mashed potatoes are plain—no milk, butter, or seasoning added.

The chocolate sets best if the candies are chilled before dipping.
