Description

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 4 cups chopped kale (stems removed)
  • 1 medium zucchini, diced (optional for added texture)
  • 1/2 cup grated Parmesan cheese (for garnish, optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart with a spoon.
  2. Add diced onion and garlic. Sauté for 3-4 minutes until onion is translucent.
  3. Pour in chicken broth and bring to a boil.
  4. Reduce heat and stir in heavy cream, crushed red pepper flakes, salt, and black pepper.
  5. Add chopped kale and diced zucchini, simmer for 10-15 minutes until vegetables are tender.
  6. Taste and adjust seasoning if necessary.
  7. Ladle into bowls and garnish with grated Parmesan cheese if desired. Serve hot.
