- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 small celery stalk, diced
- 2 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1 tbsp mustard
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp chopped pickles (optional)
- 2 tbsp chopped green onions (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and celery and sauté until softened, about 5 minutes.
- Add garlic and cook for another 1 minute until fragrant.
- Add ground beef to the pot and cook until browned. Drain excess fat if necessary.
- Stir in beef broth, heavy cream, cream cheese, mustard, smoked paprika, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally until the cheese is melted and soup is creamy.
- Stir in shredded cheddar cheese until melted and well combined.
- Optional: Add chopped pickles for a tangy bite.
- Serve hot, garnished with green onions.

- You can substitute ground turkey or chicken for a leaner version.
- Add cauliflower florets for extra texture and nutrients.
