1/2 cup water
-
1 cup cooked white rice
-
1 can (15 oz) refried beans
-
1 1/2 cups shredded cheddar cheese (divided)
-
1/2 cup diced onion (optional)
-
1 can (10 oz) red enchilada sauce
-
4-6 large flour tortillas
-
1/2 cup sour cream (for topping)
-
1/2 cup diced tomatoes (for topping)
-
1/4 cup chopped fresh cilantro (for topping)
-
1/4 cup sliced green onions (for topping)
Instructions
-
Preheat your oven to 375°F (190°C).
-
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
-
Add taco seasoning and 1/2 cup water to the beef. Simmer for 5 minutes until thickened.
-
Warm the refried beans in a small saucepan or microwave until spreadable.
-
Lay out tortillas and spread a layer of refried beans, followed by rice, seasoned beef, some diced onions (if using), and shredded cheese.
-
Roll up each burrito and place seam-side down in a greased 9×13-inch baking dish.
-
Pour enchilada sauce evenly over the top of the burritos and sprinkle with the remaining cheese.
-
Bake uncovered for 20 minutes, or until cheese is melted and sauce is bubbly.
-
Remove from oven and let cool slightly. Top with sour cream, diced tomatoes, green onions, and cilantro before serving.
Notes
-
Swap ground beef for ground turkey or chicken if you prefer.
-
Add jalapeños or hot sauce for an extra kick.
-
Serve with tortilla chips and guacamole on the side for a full meal.
