Description

These Loaded Smothered Beef Burritos are packed with seasoned ground beef, refried beans, rice, and cheese, then rolled up and smothered in a rich red enchilada sauce. Baked to perfection and topped with all your favorite fixings, they’re the ultimate comfort food for any night of the week.


Ingredients

  • 1 lb ground beef

  • 1 packet taco seasoning

  • 1/2 cup water

  • 1 cup cooked white rice

  • 1 can (15 oz) refried beans

  • 1 1/2 cups shredded cheddar cheese (divided)

  • 1/2 cup diced onion (optional)

  • 1 can (10 oz) red enchilada sauce

  • 4-6 large flour tortillas

  • 1/2 cup sour cream (for topping)

  • 1/2 cup diced tomatoes (for topping)

  • 1/4 cup chopped fresh cilantro (for topping)

  • 1/4 cup sliced green onions (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

  3. Add taco seasoning and 1/2 cup water to the beef. Simmer for 5 minutes until thickened.

  4. Warm the refried beans in a small saucepan or microwave until spreadable.

  5. Lay out tortillas and spread a layer of refried beans, followed by rice, seasoned beef, some diced onions (if using), and shredded cheese.

  6. Roll up each burrito and place seam-side down in a greased 9×13-inch baking dish.

  7. Pour enchilada sauce evenly over the top of the burritos and sprinkle with the remaining cheese.

  8. Bake uncovered for 20 minutes, or until cheese is melted and sauce is bubbly.

  9. Remove from oven and let cool slightly. Top with sour cream, diced tomatoes, green onions, and cilantro before serving.


Notes

  • Swap ground beef for ground turkey or chicken if you prefer.

  • Add jalapeños or hot sauce for an extra kick.

  • Serve with tortilla chips and guacamole on the side for a full meal.
